Baked Sweet-Potato with Tuna


Simple, comfort food. Wash a medium-sized sweet potato, pierce skin a couple of times with a fork. Bake in an 180C oven for about 45-60 minutes. Remove from oven, halve, and top with a small can of tuna-in-mayonnaise.

I read somewhere that sweet potatoes are healthier than regular potatoes though I honestly can't remember why at the moment. Think it's a different type of carbohydrate or something like that. Will get back to it later when I have the time.

which variety of sweet potato you've used? yellow or orange? sounds like a nicer alternative

ipohchai: Everyone has their preferences. I like normal potatoes too, but I happened to have sweet potatoes in my cupboard at that time =)

Oh girl it looks so sweet! You really know how to arrange the food.

The garnish looks nice and well placed. If you can arrange the lightning and play with the camera then the result would be great!

Mmm, that sounds like a good idea substituting potatoes for sweet potatoes :)

You're right, sweet potatoes are healthier. All i know is that they have more fibre than regular potatoes.

kev: You can microwave too... pierce and poke it into the oven for about 7 mins on high. but I feel using an oven's always more authentic.
